S3F2 Week 2 Results

Well, I can see how this is going to play out. I'm predicting everyone gets their money back and there will be no official winner. Ha ha. But it's awesome that everyone is doing so well!

And it's a 4 way tie for 1st place with all teams coming in with 1210 points. :)

Calendar tasks this week are:
* Try ANY recipe from the blog - it can be one from any round, your own recipe, whatever. Enjoy!
* Provide feedback on this round with what you liked, didn't like and any changes you'd suggest for future rounds & let me know if you're interested in the next round.

Fortunately / unfortunately we won't be starting the next round until September 3rd. With all of my family events; camping trips, BYU Education Week, and bdays, I can't swing starting another round until then.


Option 1: 4 week round, ending at midnight on Tuesday October 1st.

Option 2: We'll run for 5 weeks, ending at midnight on Tuesday October 7th.

Official rules may be adjusted slightly, based off feedback received. 

Looking forward, I'm going to do Healthy Holidays again! If you're interested in joining, let me know if you prefer weeks of 5, 30 days, 4 weeks, etc., how many rounds you'd want to do, what date you would want to be finished by, etc. {this input could determine the length of the next round}.

Erica's Peanut Butter Cookies

Sometimes you just want something sweet. As far as cookies go, these are pretty healthy, and super easy. 

Combine 2 cups natural peanut butter with 2 eggs and 1 - 2 cups evaporated cane juice (don't use a liquid sugar, like agave, it doesn't work). Mix thoroughly. Place rounded balls on a sprayed cookie sheet (I use the coconut oil from Trader Joe's), and flatten with a fork. Bake at 350 degrees for 8 - 12 minutes, depending on  your oven. They're kinda crumbly but delicious!

Directions

  1. Preheat grill for medium-low heat and lightly oil the grate.
  2. Brush zucchini with olive oil. Sprinkle garlic powder, Italian seasoning, and salt over zucchini.
  3. Cook on preheated grill until beginning to brown, 3-4 minutes per side. Brush balsamic vinegar over the zucchini and continue cooking 1 minute more. Serve immediately.

Erin's Seasoned Tilapia

this one is a family favorite and it's super easy.

Seasoned Tilapia

1 bag frozen tilapia
lemon pepper seasoning (our favorite is the kroger lemon pepper seasoning blend at smiths)

thaw tilapia. while tilapia is thawing, put foil down on a baking sheet and spray with nonstick spray. put fish on top of foil and sprinkle with seasoning. cook at 425 degrees for 15-20 min. or fish flakes easily with a fork.  can serve with roasted broccoli or a baked sweet potato.

Jana's Flank Steak Pinwheels


Flank steak pinwheels

About 2 lb flank steak.

*put skewers in water
*Filet steak open, like a book
*Spread asiago or Parmesan shredded cheese 
*Chop green onions and scatter those on top
*put then Gorgonzola cheese on next
*finish by putting de-veined spinach, chopped on top
*roll tightly and start skewering from the middle out. 
Lightly coat in extra virgin olive oil so nothing sticks during grilling.

You should get about 8-9 pinwheels

Grill to desired done-mess and yum! Enjoy

Jenn's Pan Fried Salmon w/Avocado Dipping Sauce

This is one of my favorite fish recipes, plus it's really simple. 

Pan Fried Salmon with Avocado Dipping Sauce2 Avocados- peeled, pitted, and diced
2 cloves garlic, minced
3 tbsp yogurt or sour cream
1 tbsp lemon juice
salt and pepper to taste
2 lbs salmon
2 tsp dill
2 tsp lemon pepper
salt to taste

Preheat frying pan with about 2 tbsp of olive oil over medium-high heat. In a medium bowl mash up avocados, garlic, yogurt, and lemon juice and season with salt and pepper, and set aside. Rub salmon with dill, lemon pepper, and salt. Place in frying pan and cover. Cook for about 5 minutes on each side.

Krista's Seasoned Turkey Burgers

Seasoned Turkey Burgers

This is one of our family favorite meals!!  My kids will actually eat these too which I always consider a major bonus!


INGREDIENTS:
1 1/2 pounds ground turkey
1 (1 ounce) package dry onion soup mix
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1 1/2 tablespoons soy sauce
1 egg, lightly beaten (optional)
6 hamburger buns, split
DIRECTIONS:
1.In a large bowl, mix the turkey with the onion soup mix, pepper, garlic powder, soy sauce, and egg. Refrigerate the mixture about 10 minutes, then form into 6 patties.
2.Preheat the grill for medium-high heat.
3.Lightly oil the grill grate. Place the patties on the grill. Cook for 20 minutes, turning once, or until well done. The inside of the burgers will look whitish in color when cooked through. Serve on buns. I use whole wheat buns. Top with lots of veggies and my personal favorite, avocado slices!!  

Kristie's Zucchini Muffins

Zucchini Muffins

2 c healthy sugar
3 eggs
1 c oil or apple sauce
2 c brown rice flour
1 c buckwheat flour
1/2 to 1 c bran cereal
1 t baking soda
1 t. Baking powder
2 t vanilla
1t salt
1 small package instant vanilla pudding
1 t cinnamon
3 c grated zucchini
1/2  to 1c. Nuts (I use pumpkin seeds)  optional


Mix all together add zucchini last. Put into muffin tin.
Bake at 350 for 25 to30 min. Check with a toothpick
They freeze beautifully .

Cassie's Quinoa Recipe

My favorite way to have quinoa is with black beans and corn.


1 teaspoon olive oil1 onion, chopped3 cloves garlic, peeled and chopped
3/4 cup uncooked quinoa
1 1/2 cups vegetable broth1 teaspoon ground cumin1/4 teaspoon cayenne pepper

1 cup frozen corn kernels
1 (15 ounce) can black beans, rinsed and drained
1/2 cup chopped cilantro (optional)
Heat the oil in a medium saucepan over medium heat.
Stir in the onion and garlic, and saute until lightly browned.
Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin & cayenne pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes.
Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.

Short & Sweet Summer Fit & Fun Calendar Tasks




Here are the tasks for this round. Be sure to do a total of 7 each week, including the ones that I email out.


* Spend one on one time with someone {child, friend, grandchild, sister, new acquaintance} focus on them and make them feel special!
* Do something for yourself that you normally wouldn’t do; indulge yourself a little.
* Recycle, repurpose or donate at least 6 things in your house that you aren’t using.
 * Write an actual letter to someone and mail it!
* Host a play date for your kids, or watch kids for someone in need of a break
* Write down as many of your blessings as you can think of 
* Make a treat for someone and take it to them
* Do a water activity with your kids/grandkids
* Give each of your kids 5 sincere compliments
* Write a note to each of your kids and let them know how much you love them.
* Take an afternoon off from life and go relax with the kids/friends
* Give more meaningful thought to what I pray for during personal prayers, pray sincerely and then listen for an answer
* Go for a hike
* Replace a "should" with a "could" then make a choice and don't feel guilty {i.e.: I should do the laundry with I could do the laundry, but I would rather take the kids swimming today. Then go swimming and don't feel guilty about the laundry}
* Do something nice for your spouse
* Paint your toenails 
* Write a Thank You note to someone
* Do a random act of service for a stranger
* Make your bed
* Clean something that has been on your to do list for a long time.      
*Do something for someone anonymously.
* Write thank you notes to 3 people you love.  
* Say a thank you prayer; all you do is thank Heavenly Father. No asking.
* Write down a list of things you are thankful for
* Enjoy nature
* Look up Matt Townsend on-line (or look up some other relationship expert) and read at least one blog entry or article on how to improve your relationship with your spouse (or some other relationship)
* Choose one thing you can do to improve a relationship and do it for at least one week
* Make a list of 5 things you can do to be a better...(mom, spouse, sister, V.T. etc).
* Make up a points/rewards system for your kids (similar to this contest but simplify it for kids)
* Read for pleasure for 30 minutes
* Spend some time crafting {paper, wood, fabric, etc.}
* Set some family goals, including a reward for reaching them. Post them where everyone can see & remember them!
* Clean out the pantry
* Do a fun family activity
* Read 3 talks from the Conference Ensign
* Work in the yard
* Go out with friends/hubby
* Clean refrigerator and/or freezer
* Try cooking/eating a veggie you use often in a new way
