Simply Stunning in Six Food Lists


Good Food List

Try to choose the majority of your foods from this list.  You get one point for every
good food choice you eat each day – up to 10 points per day.

It’s my personal opionion that it’s healthier to eat natural, un-processed foods & foods without chemicals versus low-fat/sugar/etc. foods that have artificial ingredients & chemicals in them. Since I’m in charge {heehe}, I’m adjusting the food list to coincide with my belief. So if you’re inclined to have mayo or sour cream, go for it. Just use a smaller portion instead of going crazy. If you can find a lighter, healthier version, by all means, use that. But I say; avoid artificial ingredients, chemicals & items whose names you can’t pronounce in favor of the ingredients your body knows how to process. Also, most food items have a healthier alternative, so get creative in your cooking; i.e. grill your shrimp with some spices as opposed to frying it in butter. It’s still delicious and waaaay more healthy. And that’s what I have to say about that! J

Legumes – black-eyed peas, lentils, marrowfat peas, chickpeas, etc.
Beans -Black, Pinto, Navy, White, Lima, etc.
Oatmeal, Cream of Wheat, Cracked Wheat, Bruce’s Cereal, etc.
Nuts; Almonds, Cashews, Pistachios, Walnuts, Pecans, Peanuts, Filberts, etc.   Raw nuts are healthiest, be sure to check ingredients on any "roasted" or "dry roasted" types.  
Eggs, egg whites, or eggbeaters
100% whole grain breads: 100% Whole Wheat, Multigrain, Pumpernickel, Rye, Oat Bran, Buckwheat, Spelt, Sprouted grains, etc.
Brown Rice, Wild Rice
Whole Wheat Pasta
Quinoa/Buckwheat/Amaranth/Spelt/Millet/Couscous, etc.
Multi-grain crackers that are high in fiber &/or protein {i. e. - Food Should Taste Good Multigrain Tortilla Chips, Etc.}
Low sugar, high fiber cereal {Go Lean Kashi, All-Bran; check the ingredients list}
Skim or 1% milk , Rice Milk, Almond Milk or Soy Milk
Coconut Water
All fruits
All vegetables except corn
Natural Salsa
Baked potato, red potatoes, yam or sweet potato
Hummus
Tuna (packed in water)
Chicken
Fish/Shrimp/Lobster
Lean Pork
Turkey/Turkey Bacon
Lean Beef
Lean Ham
Lunch meat considered low in fat
Cottage cheese
Protein Powder (check the ingredients for approved sweeteners, etc.)

Peanut Butter – all-natural, no hydrogenated oil
Home-made baked goods made with whole wheat {or brown rice, quinoa, millet, buckwheat, etc.} flours & approved sweeteners. i.e. zucchini muffins, bran muffins, etc.
Daily Vitamin, RDA calcium supplement (From ages 9 through 18 years, the RDA for calcium is 1300 mg. because this period of growth is a critical time to build a greater bone mass that can help prevent osteoporosis. For adults aged 19 - 50, the RDA is 1000 mg. a day. After age 50, the RDA is 1200 mg)

{A note for our Gluten-intolerant friends – feel free to substitute Rice, Corn or other wheat-free products as necessary. Just remember that they need to follow the same rules as other foods – no MSG, hydrogenated oils, artficial sweeteners, etc.}

These foods won’t give or take points away. Be wise about the amounts, but it’s still up to you.

Stevia, Agave, Brown Rice Syrup, Evaporated Cane Juice, Brown Sugar & Honey
Corn and Corn products
Natural tortilla chips/other natural corn products
Ak-Mak crackers or Nut-thins {check the labels still}
Cheese; Parmesan, Cheddar, Colby Jack, etc.
Natural dark chocolate {look for a minimum of 60% cacao}
Natural Mayo, Sour Cream, Salad Dressings, etc.
Sugar free gum
Mashed potatoes (using approved ingredients) 
White Rice – used occasionally in smaller amounts {Brown Rice still has more fiber and nutrients, so try to use that 8 out of 10 times}.
Natural, No sugar added Frozen Yogurt (not sugar-free, as in sweetened with fake, chemical sugar)
94% fat free microwave popcorn
Whole Wheat Bread (not 100% whole wheat, but still made from whole wheat)

Simply Stunning in Six!

So... It's been a few weeks since we ended. Heck, I think it's been almost a month. Sigh. My camping trip promptly "undid" all my hard work. I hope the rest of you fared better.   :)

I love BYU Education Week. I try to go every year, even if it's only for a few classes on one day. This year I was fortunate enough to go for M - Th and stay in the dorms {am I ever glad I'm not in college anymore. Not that I ever technically lived in the dorms, but still...}. It. Was. Glorious! I've always loved learning, and it's simply amazing to be surrounded by such wonderful teachers who have such great knowledge and insight. Several of the classes had similar themes woven into them; taking care of our bodies. They shared the analogy of - if we were given only one car for our entire lives, how would we treat it? Awesome, of course! But if my body equals that car, then how am I really faring?

I learned lots of wonderful things there, some of which I hope to share over the next weeks and months. But while sitting in one class, I had the prompting to stop lolly-gagging around and seriously commit to taking better care of me.

Drumroll . . .  I've decided to commit to 6 months of health competitions! I know that might sound overwhelming. And it kinda is. I've got birthdays coming up, a trip to San Diego to visit my dear friend, and Holidays galore - as I know all of you have busy, bustling lives. But, baby steps, my friends. Plus, you've gotta start somewhere. I'm not going to do 6 months straight; I'll break it down to 6 monthly competitions. Just imagine where you could be: Spiritually, emotionally and physically with that much discipline! The routines you'd have in place, the progress you'd achieve. Happy Sigh. It could be amazing! Plus, I just heard about a study they did where women who lost weight and maintained it for 6 months had a better memory. Bonus!

I realize everyone is not in the same place. And you have to WANT the change to make it happen. If you're ready to make any change, even a small one, I invite you to join me for one month, two, all six or whatever works for you. Evaluate where you are and where you'd like to be. Ready to close that gap? Then let's do it! Oh, and spread the word to anyone that would also benefit from being a little healthier. The more the merrier, 'eh?

Rules will stay pretty similar to the last few rounds and I'll get them posted ASAP. We'll still set goals and evaluate on a scale of 1-5. No points for pounds lost. Free Days for Holidays. There will be a few minor changes; all calendar tasks will be posted (no more emailed ones), guys can participate if they'd like, "Two-bites of Anything" rule (to be explained later) will be implemented and there will be a Grand Prize for anyone who completes all six rounds.

Simply Stunning in Six will start on the 5th of each month and end on the last calendar day of that same month (except December, when we'll end @ midnight on the 30th, as New Years Eve would be a Free day anyway). Running September 2013 - February 2014. It's going to be amazing!

Oh, ohh! And I know why we do better when we're counting points! Randal A. Wright spoke about this in one of his classes; people respond to challenges and not begging. When we are challenged, we rise to meet that, as opposed to when we try talking ourselves into something (that's us begging ourselves). We suspected it was psychological - and we were right!

S3F2 Week 2 Results

Well, I can see how this is going to play out. I'm predicting everyone gets their money back and there will be no official winner. Ha ha. But it's awesome that everyone is doing so well!

And it's a 4 way tie for 1st place with all teams coming in with 1210 points. :)

Calendar tasks this week are:
* Try ANY recipe from the blog - it can be one from any round, your own recipe, whatever. Enjoy!
* Provide feedback on this round with what you liked, didn't like and any changes you'd suggest for future rounds & let me know if you're interested in the next round.

Fortunately / unfortunately we won't be starting the next round until September 3rd. With all of my family events; camping trips, BYU Education Week, and bdays, I can't swing starting another round until then.


Option 1: 4 week round, ending at midnight on Tuesday October 1st.

Option 2: We'll run for 5 weeks, ending at midnight on Tuesday October 7th.

Official rules may be adjusted slightly, based off feedback received. 

Looking forward, I'm going to do Healthy Holidays again! If you're interested in joining, let me know if you prefer weeks of 5, 30 days, 4 weeks, etc., how many rounds you'd want to do, what date you would want to be finished by, etc. {this input could determine the length of the next round}. 

Spread the words to any friends or family who might be interested in the next round. 


Erica's Peanut Butter Cookies

Sometimes you just want something sweet. As far as cookies go, these are pretty healthy, and super easy. 

Combine 2 cups natural peanut butter with 2 eggs and 1 - 2 cups evaporated cane juice (don't use a liquid sugar, like agave, it doesn't work). Mix thoroughly. Place rounded balls on a sprayed cookie sheet (I use the coconut oil from Trader Joe's), and flatten with a fork. Bake at 350 degrees for 8 - 12 minutes, depending on  your oven. They're kinda crumbly but delicious!

Directions

  1. Preheat grill for medium-low heat and lightly oil the grate.
  2. Brush zucchini with olive oil. Sprinkle garlic powder, Italian seasoning, and salt over zucchini.
  3. Cook on preheated grill until beginning to brown, 3-4 minutes per side. Brush balsamic vinegar over the zucchini and continue cooking 1 minute more. Serve immediately.
